Lomo Saltado
A beloved Peruvian stir-fry that blends Chinese and Peruvian cuisines. Tender beef strips wok-tossed with onions, tomatoes, and soy sauce, served over french fries and rice.

Cut the beef into thick strips. Season with salt, pepper, and cumin.

Heat a wok or large skillet over very high heat with oil. Sear the beef strips in batches until browned. Set aside.

In the same wok, stir-fry the sliced onions for 1 minute. Add the tomato wedges and aji amarillo.

Return the beef to the wok. Add soy sauce and red wine vinegar. Toss everything together for 30 seconds.

Serve immediately over french fries with white rice on the side. Garnish with fresh cilantro.
