Pisco Sour
Peru's national cocktail. A frothy and tangy blend of pisco brandy, fresh lime juice, simple syrup, egg white, and aromatic bitters.

Add pisco, lime juice, simple syrup, and egg white to a cocktail shaker without ice. Shake vigorously for 15 seconds to emulsify the egg white.

Add ice to the shaker and shake again for another 15 seconds until well chilled.

Strain into chilled coupe glasses.

Drop 3 drops of Angostura bitters on the foam and use a toothpick to create a decorative pattern. Serve immediately.
